The comment was made in passing, but it struck a chord with West.
He pushed the rice around in his bowl and shrugged. "I've had that thought. Once I save up enough money, I'll open a restaurant. Start small, with a bistro or something."
West launched into a passionate description of his dream, his face lit up with a smile.
He'd had this dream since he started culinary school. If it hadn't been for his parents' troubles, he might have already achieved it.
But getting more experience wasn't a bad thing. Once Seven graduated from college and the family's financial burden lessened, he could open his own place.
It was only another four years, give or take.
Ethan was also very supportive of his son's idea.
"West, if you want to do it, just do it. After the holiday, I'll find a job. The family won't be such a burden then. You can go for it without worrying about us."
Grace immediately agreed. "That's right, West. My leg is almost healed. After Nina has the baby, I can look after the child. With your father working, we'll have enough to cover expenses. You don't need to worry. Your father and I both support you opening a restaurant."
Hearing his family's encouragement, West felt a warmth spread through him. He wished he could go find a location right away and open after the holiday.
But he knew that opening a restaurant was easier said than done.
He only had about eighty thousand dollars in savings, which wasn't even enough for a year's rent. If he lost it all…
He'd need to save at least two hundred thousand to even dare to try.
"Yeah, I know. We'll talk about it later," West said, eating quietly.
Janina's eyes glinted. She put down her fork and looked at West with a smile.
"Brother West, how about we open a restaurant together? I'll provide the capital, you provide the talent. I happen to have some spare cash. With us siblings working together, we can't fail."
"Huh? Where did you get the money?"
They decided to do it. That night, the two of them went over the business plan for the restaurant.
The next day, they went to look at potential locations.
After three days of searching, they finally chose a spot. Next up was renovation.
Because he needed to oversee the renovations, West explained the situation to his old boss.
He also promised that if the hotel couldn't find a replacement for the holiday season, he would come back and help out until they found someone.
The hotel owner had always valued West.
Hearing he was opening his own place, the owner couldn't really stop him. There were plenty of chefs who wanted to work at their hotel; less than an hour after posting the job, they had over a dozen top chefs applying.
West was finally free of his obligations and could focus entirely on the renovations.
