As it crept toward seven o’clock, Nevin started to feel frustrated, worried that Demi wouldn’t make it back in time to eat what he’d cooked.

He thought of the creamy rice porridge Demi had devoured that morning.

The entrées were a disaster, but a simple rice porridge hd to be easier.

Luckily, Demi’s recipe notebook had several versions of porridge marked out.

Nevin flipped through the pages; the simplest one was a light vegetable rice soup.

Following the directions, he rinsed the rice, poured it into a pot, and simmered it for an hour until it turned thick and starchy. Once it came to a gentle boil, he had to keep stirring, then toss in chopped greens ten minutes before it was done.

After Helga finished helping Orion wash his face, she headed into the kitchen to help out while getting their own dinner ready.

Every now and then, she’d remind Nevin to turn the heat down or tell him to chop a little ginger and sprinkle it into the soup.

An hour later, the chopped greens went into the pot, and the thick, starchy aroma of rice mixed with the fresh scent of vegetables, filling the kitchen.

“Add half a spoon of salt and give it ten more minutes, then it’s ready to serve.”

Nevin let out a long breath, like he’d just finished something impossibly hard.

“Is she still at the office?”

“Yes, sir,” Joe answered on the other end of the line, then added, “But Ms. Snow just finished her dinner.”

Nevin felt like a deflated balloon.

He hung up without a word. Fine. He’d just call this Demi’s late-night snack.

Helga hesitated for a long moment, then glanced at the bot of vegetable soup. “Mr. Nevin, this, um… this vegetable rice soup doesn’t seem very nutritious…”

For a pregnant woman?

What was Mr. Blackwell even thinking?

He’d be better off sticking to that asparagus with shrimp.

Of course, Helga didn’t dare say that part out loud.

Nevin went quiet again.

After Orion finally finished his homework and came downstairs, he immediately started shouting about bringing dinner to Demi.

He hadn’t even thought about eating his own meal yet.

“Dad, I drew these little flowers. When my baby sister is born, I’m giving them to her,” Orion said.

He held up his colored drawing of tiny flowers, already planning to save up a whole stash of presents and toys for his sister so they could play together once she was born.

So, maybe tonight… they shouldn’t bring dinner to Mom after all.

Nevin looked at Orion’s eager little face, the words stuck on the tip of his tongue.

This soup…

“Helga, serve up the food,” he said instead.

After a beat, Nevin turned to Orion. “Mr. Ruiz just told me Mom already had dinner. We’ll go early tomorrow and bring her something then.”

“But I…”

Orion lowered his head, the disappointment written all over his face.

Nevin reached out to ruffle his hair in comfort, then took his hand and led him to the dining room.

Tonight, he was determined to master at least one kind of porridge that was actually good for her.

After dinner, Orion was coaxed upstairs to play, while Nevin stayed behind, practically living in the kitchen.

With Helga supervising, the simmering time and heat for the porridge weren’t much of an issue.

The rest came down to the add-ins and seasoning.

Nevin gave the soaked clams, sliced scallops, and other seafood a quick prep, cleaning and rinsing them to get rid of any strong smell.

He worked straight through until nearly midnight before a full pot of seafood porridge was finally done.

“It’s really rich and fresh, Mr. Nevin,” Helga said.

Nevin tasted a spoonful himself and felt pretty satisfied. He ladled a bowl for Helga, and she took a sip, praising it over and over.

“Any fishy taste?”

Helga smacked her lips thoughtfully. “No.”

Dried seafood didn’t have that harsh, raw smell to begin with; instead, it carried a mellow, sun-dried aroma.

Hearing that, Nevin nodded, finally satisfied enough to head upstairs.

The only downside was that in the shower, it took several rounds of scrubbing to get the lingering seafood smell off his skin.
