On Monday, I got up early, took a shower and got dressed. I fix a pot of coffee and heated up a couple of breakfast sandwiches so that I can eat before going downstairs to get started baking. I always bake extras on Fridays so that we have plenty for the weekend. But the girls know how to make more if they need to.

On Monday, I always have to make fresh batches of everything. Whatever is left over from the weekend, I

donate to the local shelter.

When I’m done eating, I finish off my coffee and make myself a to go cup and head downstairs. I have to

get as much as I can be done before seven o’clock this morning. Dove has a meeting that she has to go in

for so I’ll have little man with me for a little bit. Archie is going into the IT company today to get some

work done. And Henrie has a job interview with a company at nine this morning. So for a little while, it’ll be

just me and my little man.

I head downstairs and turn on the tv to listen to the news while I get started. I usually just like to hear the

weather for the day and then I’ll switch over to music. Once the tv is on, I sit my coffee down, put on my apron and get started. First, I take all of the pastries that were left over from the weekend and box up and mark the date on them and set them aside. Once both of the displays are empty, I clean them and get

busy making new. I make up the cupcakes and donuts first since they will need to cool down before I put

icing on them.

Once those are started, I get busy with the cheese cakes and keep moving alone with the different pastries. Before long, I’ve drunk one pot of coffee and started on another. I almost have the front display case full as well as the back one. While the last few things are baking, I go out and get the front coffee pots started. I also have a three in one slushy maker that makes three different kinds. It runs continuously, so I don’t have to worry about starting it. We also make smoothies, but those are easy to do.

Once the coffee pots are started, I head into the back and start on making breakfast sandwiches. This is something new that I decided to start making. When I had the bakery done, I made sure that I had a big stove with a griddle piece in the center of it. As well as big industrial sized ovens and deep friers. I wanted

to be able to make anything should I want to,

I grabbed out two big skillets and started frying sausage in them, I grabbed a couple of baking sheets and put bacon on them, and popped them into the oven. I turned the griddle on to heat up and started mixing up a triple batch of biscuits. When the last of the pastries are done in the oven, I take them out to cool and

continue with the stuff for the stuffed biscuits.

When the sausage is done frying up in little pieces, I drain the grease off of it, take out some of the sausage, and set it to the side. Then I add seasonings, flour, and water and start making gravy. When it’s at the right thickness, I let it continue to cook while I get started making sausage patties and fried eggs. When the bacon is done, I pull it out and put it all on one tray.

It doesn’t take long to get all of the sausage patties and fried eggs done. When I have everything ready, I
